| Before we get started, I want to acknowledge that not everyone eats chicken. I myself didn't eat chicken (or any other meat) for years! That being said, chicken is a staple food item in countries around the world, including here in the United States. As a lean protein, chicken fills you up while delivering a ton of important nutrients. And perhaps its greatest benefit: It's extremely versatile. You could spend your whole life cooking different chicken recipes and never run out of ideas! | Before I pass it over to our fabulous team of registered dietitians to tell us their go-to chicken preparation methods, I want to assure all you non-chicken-eaters that we will be covering the best ways to cook tofu at a later date. Honestly, I'm even more excited for that newsletter! OK, that's all from me. Here are our RDs. | | | | Chicken for dinner, Ginger Wojcik Newsletter Editor, Healthline | | | Written by Ginger Wojcik July 9, 2024 • 4 min read | | | | | | Q: | What's your favorite way to cook chicken? | | A: | "Grilling! I love the taste and texture of grilled chicken. The fact that I can throw any vegetables on the grill with it for a delicious meal that takes me to a lovely summer night. If the grill isn't an option, my go-to is pan-seared chicken with olive oil, onion, and garlic, served with some pasta or shredded for a chicken salad." — Leah Maschino, MBA, RDN
"I don't eat chicken; I've been a vegetarian for over 20 years." — Lindsay Mahar, MS, RDN, Wellos Coach
"I don't really eat chicken anymore (we've mostly transitioned to a vegetarian diet with some sushi and bison in the mix), but when I did, my favorite was diced chicken thighs simmered with coconut milk, tomato paste, lemon juice, yellow curry paste, a tablespoon or two of peanut butter, and a few other herbs and seasonings." — Kelli McGrane, MS, RD
"Does buying a rotisserie chicken from the store for chicken tacos count? Otherwise, I like to keep it simple with pan-seared chicken breast. I marinate chicken breast in store-bought or homemade marinade, sear it on both sides in a pan with olive oil, and then add a little chicken stock and cover the chicken until it is cooked. I like to serve it with risotto and asparagus!" — Kirsten Seele, MFN, RD, LD, NBC-HWC, Wellos Coach
"A yummy, slow-simmering chicken curry recipe that I adapted from my cousin. If I had to cook it any other way, it would be so rubbery it would bounce off the walls." — Mohini Bhakta, MBA, RDN, CDCES
"Roasted or air-fried boneless, skinless chicken thighs — they're very hard to overcook and still stay tender and juicy!" — Jessica Sandoz, MS, RDN, LDN, CDCES
"Chicken hasn't been on the menu at my house for years because my son has sworn off it because of his deep love of them." — Annie Hibbs, CPPM, MS, RD, LD | | Want to learn more about food, diets, cooking, or some other nutrition subject?
