Well, the short answer is no. As with any other vegetable, the longer herbs are left out to dry, the more it reduces the nutrient content. This is especially true of water-soluble vitamins such as vitamin C and the B-complex vitamins.
However, many dried herbs maintain similar antioxidant levels to their fresh counterparts. In case you forgot, antioxidants are molecules that help your body fight off the potentially harmful effects of oxidative stress, which may contribute to chronic conditions, including cancer and heart disease. There are also some spices, such as garlic, onion, and ginger, that maintain their anti-inflammatory effects even after being dried.
So, if you have access to freshly picked herbs, use them for a nutritional boost.
