Ever try a chilled tofu salad?
Breaded chicken and salmon are my usual proteins for salads; tofu never crosses my mind — especially not eating it "raw." This recipe doesn't tell you to cook the tofu, which makes it an incredibly easy and quick meal to prepare. There's actually minimal "cooking" time, except for the green beans. The recipe primarily involves chopping a few of the ingredients and combining them with the miso-ginger vinaigrette in a large bowl.
