The ideal summer meal: Cold soba noodles in creamy cashew sauce

When the weather is hot, your noodles better be cold — or at least room temperature, as they are in this summertime soba noodle dish. As the gluten-free babes already know, these thin Japanese noodles are made from buckwheat, a seed that, despite its name, contains zero gluten. Buckwheat is also high in fiber, high in protein, and linked to a range of health benefits.
Delightfully, this recipe includes colorful and crunchy watermelon radishes, which are a great source of fiber and vitamin C. (BTW, any type of radish will work fine here.) But it's the creamy cashew sauce, flavored with tamari, lemon, chili pepper, ginger, and sesame oil, that puts these noodles a notch above the rest.
