🥕 Those carrots aren't going to peel themselves! 🥕

Now that you've shopped for produce, it's worth taking a little extra time to make sure it's ready to go into your recipe or have on hand for munching. (Because let's face it: Unpeeled carrots — or unsliced peppers, unwashed lettuce, un-diced squash — are less likely to get eaten.)

By "a little extra time" we mean just a little. Like 30 minutes.

For today's challenge: Pull out your fresh produce and turn on some good tunes. Get out a cutting board, a sharp knife, a peeler, and a colander. Set a timer for 30 minutes, and see how much you can wash, peel, and cut in one focused effort.

If you're feeling overwhelmed, start with the produce you'll need for the plant-based recipe you've chosen. (Hint: Making that recipe is tomorrow's challenge!) Think of this as an experiment to see what you can get done in a short amount of time.

Keep-them-fresh tips

  • After you wash leafy greens, get them as dry as you can and store with a paper towel.
  • Don't wash berries and grapes ahead, because they'll mildew quickly. Give them a quick rinse right before you eat them.
  • Some produce, like apples and sweet potatoes, change their color if pre-cut. They're not bad — but they may look less appetizing.
  • Store any produce you want to graze on in clear containers near the front of the fridge so they're the first thing you see when you go for a snack.
