Healthy recipe: Crab salad
Make crab a tasty dinner solution. In a small bowl, combine 1/4 cup lime juice, 1/4 cup rice wine vinegar, 1 teaspoon sugar, 1 seeded and thinly sliced cucumber, and 1/3 cup chopped fresh mint. Add 12 ounces crab meat and toss to coat well. Divide 4 cups mixed salad greens or romaine lettuce among four plates. Top with crab mixture. Spoon any remaining dressing over the crab. Garnish with lime wedges and serve.
