| Anyone who knows me knows I love matcha, but — full disclosure — the first time I tried it, I hated it! It was way too bitter and grassy. It turns out I wasn't preparing it correctly. I used boiling water, which is far too hot. The water should be between 160°F and 175°F (70°C and 80°C). I also used a whole tablespoon of matcha, but one serving is around 1 to 2 teaspoons. No wonder I didn't like it!
