| I try my best not to yuck other people's yums, but I have to ask: Is anyone really eating the raw mushrooms at the salad bar? The same goes for the raw mushrooms in premade veggie platters. | Never once have I felt the slightest urge to eat a raw mushroom — regardless of how or where it was presented to me. In fact, I'm convinced that every one of these uncooked fungi ultimately ends up in the trash. (If you have evidence to the contrary, please let me know!) | Turns out my innate aversion to raw mushrooms may be backed by some nutritional logic. Some varieties are safe to eat raw, some are only safe when cooked, and some should not be eaten at all!
Eating the types of mushrooms found at the grocery store or salad bar (creminis, shiitakes, oysters, etc.) raw is generally considered safe. However, I wouldn't recommend it since they can be difficult to digest.
Cooking mushrooms before consumption is a good idea for three important reasons: - It makes them easier to digest.
- It increases the body's ability to absorb B vitamins, selenium, potassium, phosphorus, and beta-glucans.
- It reduces the risk of illness from bacterial contamination.
- Some mushrooms, such as morels, contain toxic compounds that are only removed through cooking.
Remember: Most varieties of wild mushrooms are not edible, and some varieties are lethal to ingest.
