As the name suggests, resistant starches "resist" digestion. Because they do not break down until they reach your large intestine, resistant starches actually ferment in your gut, where they feed your gut bacteria. These beneficial bacteria help keep your digestive and immune systems healthy and may protect against diseases such as diabetes, inflammatory bowel diseases, and colorectal cancers.
Other possible benefits of resistant starches include: - reducing the glycemic response (how high or how quickly your blood sugar rises)
- aiding in weight management by helping you feel fuller for longer and increasing fat oxidation
An interesting fact is that you can increase resistant starch in some foods by cooking and cooling them! For example: Oats, rice, and potatoes that have been cooked and cooled have more resistant starch than if you do not cool them before eating. This is due to a recrystallization process that happens with cooling. (And don't worry — reheating the cooled food won't decrease the resistant starch after the recrystallization process has happened.)
Some other foods that are particularly high in resistant starch include: - sorghum
- barley
- pinto beans
- black beans
- soybeans
- garden peas
- green bananas
