| Story time. | I'd never eaten cottage cheese until last month. Then I fell for the viral cottage cheese flatbread recipe, which people were raving about as a low carb, high protein "bread." If you haven't seen it, you take a cup of cottage cheese and blend it with two eggs, a pinch of salt, and whatever other herbs and seasonings you prefer. Then you pour the mixture onto a sheet pan lined with parchment paper and sprayed with oil to prevent sticking. After baking at 350°F for about 30 minutes, it'll be ready to use. | Or so I was led to believe. | The first time I tried it, the mixture didn't set. In all fairness, I didn't know I had to blend the ingredients before pouring everything onto a pan. Lesson learned! For my second attempt, I followed the exact instructions I'd watched in various TikToks. But when I tried to remove the fully cooled flatbread, the parchment paper stuck to the bottom. It was absolute torture gently ripping off the little pieces with a tweezer (yes, a TWEEZER). | Even after I got most of the paper off and made a sandwich, I found the texture to be too delicate, and it crumbled after my first bite. I won't say I'll never try it again, but I'm about 97% in that camp. | What this experience did teach me is that cottage cheese is a delicious source of protein on its own.
