Often, cosmetic chemistry is very butterfly effect-ish: one tiny change can make a massive difference in the formula. Emulsifiers are one of the biggest culprits – using a different emulsifier, even without changing the remaining ingredients at all, can make the difference between a fluid milky toner and a thick waxy cream. Emulsifiers are used to hold together water-based and oil-based ingredients, so that they play nice together in a cream rather than separating out like salad dressing. But for so many complex chemistry reasons, they end up having huge, unexpected effects on the texture, thickness, appearance, and feel of a final formula. If you don't like how your lotion or cream is turning out while you're formulating, switch the emulsifier and it'll change everything. Then again, there's still a lot you can do to change a formula even with different emulsifiers. For example, Lipid Gold and Night Shift actually use the same main emulsifier. If you've used those two products, you know how wildly different they feel. I played around for a very long time with both those formulas to get the texture exactly right, finding the perfect additions to that main emulsifier to get Lipid Gold lightweight enough and Night Shift rich and nourishing enough. | | I always say that cosmetic chemistry is like baking: you can come up with a recipe that makes total sense on paper, but when you try it out, you might end up with muffins that look like hockey pucks or cookies that melt off the sheet. It's that unpredictability that keeps me coming back to the lab bench – because when you get that perfect formula, it's the most rewarding thing on earth.
